I absolutely love this post - superb work experience for Adam and Stevie (and well done Catherine!!).

I’m planning to try this out - especially as we’ve literally just found and restored an old tortilla presser that was under our hedge!! It’s clean now, I promise!!

I don't understand the science either but I still enjoy using my instant pot to make yummy food. (I love driving too but have no clue what happens under the bonnet!)

This looks like a really tasty recipe. I have done the shredded chicken from MPC but I live the sound of these sides as well.

It's making me even more sad that I passed on the tortilla press in the local charity shop recently. It was fine when I went back an hour later ☹️

p.s. is Masa, masa harina? If you can’t get it easily, does wheat flour work at all?

Masa is masa harina. Worth seeking out online as it isn’t the easiest thing to find in the shops if you aren’t in London.

You can make flour tortillas which are softer and a bit more pliable - better for wraps. And they usually include a bit of fat too. I have a recipe if you’d like it.

The corn ones are better for tacos. Do not be tempted to use cornmeal/polenta though. It hasn’t been nixtamalized and won’t work.

Thanks Catherine. I’ll try to get some online but I’d appreciate a flour tortilla recipe too. We used to be early morning regulars at Borough Market about 15 years ago when we lived in North London and our daughter lived near Brixton. Since we’ve all moved to Wales, it’s so much more difficult to buy all kinds of produce. The internet is definitely my friend!
