I think it is to be cooler by Thursday so saving this for the end of the week. Tomorrow I’m planning the buttery tomato soup for lunch. I know it will be good and so quick too

Yes, never knowingly without a version of that soup in the house! Possibly my favourite meal to keep in the freezer.

This is also a very Scottish thing. The bacon effect is achieved by using ham stock from a gammon or bacon joint, par boiled. On day 2, when there is not quite enough in the pot left for 2 people, a can of tomato soup stretches it and adds yet another layer of childhood comfort.
