Hi Laura, yes. For best results I would use unskinned thighs with the bone in. If you use fillets, you don't need to make the broth first, but you should then use a chicken stock.

A mash up of Delias and Paul Hollywoods recipe. Delia for the rough puff pastry and PH for the caramelised onion idea. I’ve just had the runt of the litter and it was very tasty. I’ll order some chicken and make the soup.
