Well if I use this book as much as Modern Pressure Cooking then I know it’s going to be an absolute dream. I am still discovering much loved recipes in Modern Pressure Cooking as it’s such a treasure trove.

I’m so excited for this, Catherine! Congratulations! I already feel like I need a second pressure cooker! 🤣 My current one is the instapot which has so many other uses! Though maybe I’ll splurge on a thermomix at some point to complement it instead… 🤔

Well, you know what my choice would be....

Seriously, though, I would definitely consider a stove top. I have a Thermomix too but it doesn't get much use! I've had 2 - the old style one which I l had on long loan when I reviewed kitchen kit in The Guardian - I loved this one and was sad when I had to give it back. Then a while back I was given the computerised one which drives me a bit mad! I keep going back to hand held blenders and my Vitamix instead!

I do wonder that it won't cut the things into the sizes I want... I feel like it might frustrate me too, that's what's made me hold off. Plus the cost and the counter space!

I've got the big instapot plus a Vitamix, Blendtec, dehydrator, Kenwood (in the cupboard, but comes out once a fortnight, mainly for the food processor) and a bread maker (hasn't been used in years...) so more kit does require careful consideration. I suspect when I get my copy of your new book I'll end up buying the stove top pressure cooker! :-D

I finally feel like I'm getting my mojo back into cooking now that my daughter is willing (or accepts she has) to try more things and I have a little more time.

I am really interested in this new book, Catherine. I have been lurking with interest in the background of your writings as I would love to start pressure cooking but, first things first, which pressure cooker to buy (and what size)? Do you have any guidance on this in the book or elsewhere?

I’ve just preordered and look forward to receiving it. Honestly, the whole way I cook has changed as my main cooking source is an oil range cooker and since I’ve discovered pressure cooking it’s been a revelation. And cheaper and quicker. Tougher cuts of meat are much more succulent pressure cooked than slow cooked in my oven. Originally I only felt confident using an electric pressure cooker but next year, when we change to a heat pump and stop using oil, I’ll buy a stovetop as we’ll be changing to all electric. Thank you, for inspiring me Catherine. I’m also able to convert some recipes now but would love you to tackle some of the new Ottolenghi ones!

When I first started pressure cooking, my only cooking source was an oil fired Aga and I discovered the same thing re meat. And a stove top worked too, because it helped keep the lids down.

Funnily enough I've been looking at Ottolenghi Comfort as a possible - I think there's a lot in there which is pressure cookable - let me know if you have any particular dishes in mind!
