Hello Catherine. Tried the rice turmeric coconut combo last night. Delicious and came out perfect. Didn't have coriander. But didn't matter. Thank you for the inspo! The yellow colour looked so pretty next to a purple cabbage spicy slaw I served it with - lots of polyphenols. Interesting your husband is going cold rice for the resistant starch. Better for gut health and balancing blood sugar levels and preventing type 2 diabetes right?
And yes, he is generally very anti white carbs unless resistant starch. He started a while back to help manage a condition - not type 2 diabetes fortunately. Tbh, the only person who really loves white carbs (except for pasta, I can't love wholemeal pasta in the same way I love white) is Adam, which is why I do still cook them a lot. A lot of his lunches cover all bases in terms of rainbow colours though - shall be writing about this soon.
Also thanks for the reminder to use or lose our small shops. A Lidl has opened near me. Our Turkish local run by 3 brothers has responded by upping their game with wider variety of organic beans and grains and their variety of organic dairy, kefir etc. The stuff people can’t get in Lidl. But there are 3 of them to fight back, and I imagine this has taken some investment and energy their side. Anyway, I’m trying to make a point of using them more. I like that all their fruit and veg comes in paper bags and you can pick yourself. So less plastic.
We are blessed with a magnificent not on the corner corner shop. It’s Turkish owned and I can find everything I need by way of pulses and beans and couscous and bulgar but most special of all the pastries. I don’t see it going anywhere but you never know. There is an empty shop on the corner that looks perfect for a big brand so we keep our fingers crossed and ensure we buy from them a few times a week.
Ours isn’t on the corner either! And a 15 min walk takes me to several as you describe - 2 of them have their own in house bakeries too, love watching the bakers bake and shape. But yes, use or lose. With mine, I go in knowing they probably aren’t going to have what I need and just buy some tea or similar instead. Hoping things will improve (I don’t think it will, but will support them regardless).
This sounds really tasty. I 'don't like" fish fingers but I think this is one of those ingredients that I need to try eating again as there are very few things that I used to dislike that I don't like currently (except muscles). I'll have to try this soon.
Boo about the corner shop, I am so lucky in my village that we have a village shop and a petrol station which sells just about anything you could want, I'm just having to learn the habit of actually using it as before moving here I never had that luxury.
