You make a great teacher Catherine! Very reassuring for beginners. I’m fed up as I noticed my gasket had been damaged so have ordered two replacements. Hope they arrive quickly.
We had the giant couscous salad from your book last night, very yummy and the chilli con carne is made for tonight. I poached a whole chicken in it for caesar salad at the weekend. I'm on a roll! Thankyou so much for all your information. I'm definitely a convert but am keen to refine my skills so will be practising more and more. Pippa
Hi - so I've looked and it seems that for some bizarre reason, this particular model doesn't do low pressure. Which is a shame, but it doesn't mean you can't do the dishes which require low pressure, you can just do them at high pressure for less time. I can help with that.
Having a great time practicing with my son's pressure cooker. He bought it to use in the process of growing mushrooms from scratch but I thought it would be a really economical way of cooking the family meals while its sitting there taking up space in the kitchen in between mushroom growing. Quick question, it's a basic stove top 7.5 litre 15psi, how do you bring it up to low pressure as in some of the recipes in your book? I can't seem to find an explanation of that anywhere.
It is hard for me to advise you on this without knowing which pressure cooker you are using. Most will have 2 pressure settings. Depending on your type, you either have to set it to the lower pressure or watch for it to reach the lower pressure - which you should be able to see from the pressure gauge. But if. you tell me the make/model or send a photo I should be able to help properly.
Thank you so much Catherine for these posts. I have an electric PC at the moment, but I am saving up for a stove top as I think I will need another ! Your teaching here is really helpful and gives us the confidence to know how to use the stove tops. I am falling in love with my PC so much.
Loving this, thank you 🙌 I have a question which is likely very foolish... 🙈 You haven't mentioned the plug bit that goes on the top and I remember my mum putting this on when the pan started to whistle. Have I missed something or am I being silly?! 🤦♀️😂 Thank you again
Hi Sarah. I'm a bit bemused by this! I can only assume that it is something that was a feature of an old style pressure cooker I don't know about. There is no need for any plug on any modern pressure cookers that I know about!
Heavens, I'm just loving your regular newsletter with the step-by-step guide to using what has been an intimidating beast. Thanks for the regular injections of confidence!

LOVING the extremely useful and practical insights, Catherine. Great stuff!
First time use with just water is such a clever idea.
Thanks for solving that mystery! I was looking at how to boil eggs on p38 of your book using low pressure...

Thanks for your speedy reply Catherine. It's a basic Prestige 7.5l 47283, with just a metal pressure gauge in the lid. Pippa Young

Thank you Catherine for this very clear explanation.
