We’re mid-build of an extension which has drastically reduced my kitchen space and time available to cook. Since getting your book at Christmas I’ve become a little bit obsessed (a lot, really) with using my PC; it’s been like getting a brand new piece of kitchen kit. Barely a meal goes by when it doesn’t get used. There are so many fab recipes in the book, and I’ve been able to PC-up some Nigel S and Diana H recipes (the only books that haven’t been packed away during the building work) too. I’ll be hanging on your every word here. Thank you!
I regularly use my PCs (old school ones in various sizes) to cook beans and other pulses or rice but have been too scared to try it with things that don't have much water 😣
If they are very old school and let out a lot of steam while cooking, you may have to add a little more to compensate - but I will cover that with every individual recipe.
I have downloaded and subscribed here to Substack. Never heard of it before, but if you’re on it I’m all in for that ! Your books are brilliant and has changed the way I cook rice that’s for sure ! That’s saying something as I’ve only ever had one way of cooking it and could only do a fixed amount 😂 but it always came out perfect. However now I cook as much as I want in my PC. I’m really looking forward to seeing what you share her Catherine, and I’d like to thank you for sharing your PC love as I’ve still a long way to go before I’m an expert but I’m willing to learn more as I love all the possibilities for an way of cooking.

I've got no idea about substack but I bought my instant pot about a month ago and it's life changing. I bought your book and less than an hour later I'd knocked up some lemon curd. Every recipe is right up my street.
Living with a long term illness means I don't have much energy and pressure cooking has meant that I've been able to cook food that's been off the menu for a while which is brilliant.
Looking forward to learning more about pressure cooking.
I totally understand about long term illness. Being able to cook without standing constantly over the stove can make such a difference when you are trying to conserve energy and manage pain. I hope my book and everything I write here is useful to you.
Thank you for sharing more of your creativity! Since buying a PC & your book I have not stopped using it. And find your recipes a wonderful source of inspiration. It is MY mission to get as many others into pressure cooking themselves so rest assure; I will share as long as far as possible
I was gifted my grandmothers Ancient PC (one with the top spinning valve) years ago and was too scared to cook anything other than ham shanks. I was shopping in Lidl and saw a German brand PC for a silly price so I had to buy it. The brand is a GSW, I've found a link to it but when I bought mine it was half the price than that listed here
I'm very new to pressure cooking - put off by my mothers sprouts done for 30 minutes back in the 50s and 60s! Here I am at 74 having bought an instant pot Ultimate before Christmas and only used my oven once since then. I love it, bought your wonderful book and am enjoying studying everyone’s comments and recipes on the Facebook site, so helpful. I am now compiling my own personal recipe book converting ( with a bit of trial and error) my loved recipes. Really looking forward to learning lots from you, thank you.
As I think you know, your first PC book ten years ago was a turning point for me. And the second even more so.
I now own two WMF (the best brand IMHO) pressure cookers, a big and a small, and they are used daily. Here’s my PC cheerleader chant. Pom-poms at the ready...Taste enhancing, fuel saving, super time saving, heatwave friendly, water frugal, nutrient preserving, non hissy silent, creativity inducing, money saving, good looking pressure cookers! Ra ra ra!!! 📣
I bought your book and my first pressure cooker a few months ago. Thank you for your very detailed guidance in the book. I wouldn't have had a clue otherwise. I've now started adapting recipes that aren't specifically meant for the pressure cooker.

Yea, they are set at a slightly lower PSI which is annoying! Are you having to add a lot more time?
